This elegant blend of Chardonnay and Pinot noir has delicate pear and lemon characters, nutty bready complexities, a lively acid structure, and a lingering, creamy finish from five years spent "en tirage" on yeast lees. Very refreshing and refined, a classic aperitif wine. Will pair well with most anything, especially appetizers, lobster, prosciutto, and raspberries.
Fermentation and Aging: The Pinot and Chardonnay components were first fermented during the 2001 harvest season. Shortly after, they were carefully blended to create the 2001 Brut base wine that was bottled in September of 2002, fermented in bottle, and aged five years "en tirage" on yeast lees to give the wine its creamy texture and toasty notes.
